Amaranth, highly nutritional pseudocereal and traditional american crop has good food potential value. Amaranth grain doesn't contain gluten. The high content of quality protein and unsaturated fatty acids is one of its advantages. It is also a carrier of a very valuable fibre and good source of squalene.
